Bean (meat) braised noodles
Need ingredients
LONG BEANS
500g (1 pound)
Pork (fat and lean)
500g (1 pound)
noodles
500g (1 pound)
dried chili
2 pieces
thick soy sauce
5g
salt
25g
ginger
10g
Method steps
1. Prepare the above ingredients.
3. Cut the pork into small cubes, separate the fat and lean parts, and stir fry the fatty diced meat to make oil. If you want to eat large chunks of meat, you can cut the lean part bigger.
5. Boil water in a wok and bring it to a boil. Then, add the noodles to the wok and simmer over high heat for 2-3 minutes until they are about 20-30% cooked.
7. Heat up the wok, pour in a small amount of oil, then add fat lard, stir back and forth, and stir fry until the oil is removed.
9. Add diced lean meat and stir fry for about 2-3 minutes.
11. Spread the beans evenly.
13. After smelling the fragrance, open the pot and stir fry the noodles, meat, and beans a few times to make them evenly distributed, then put them in a bowl and eat.
Tips
1. Those who don't like to eat beans can switch to lotus roots.
2. Pork should be both fat and lean. Fat pork should be stir fried to make oil and then stewed with noodles, which will enhance the flavor of the noodles.
3. When simmering, be sure to cook until fully cooked and not rush to boil, especially the beans, otherwise it can easily cause diarrhea.
4. If it is hanging noodles, first boil them in boiling water until they are two times ripe. Later, when stewing the noodles, they will taste better and cook faster. Alternatively, fresh wet noodles can be used instead, so there is no need to boil them. They can be directly placed on top of the beans and stewed.
